There are people here now who can't understand each other, I have a mute friend, I don't know sign language, so he constantly writes on paper when we try to communicate. Sometimes drawing pictures. Some researchers claim homosapiens wiped out neanderthals by our ability to communicate with a more developed larynx. Neanderthals had larger brains than us but hadn't considered any forms of exchanging info. other than their own. Some here assume aliens have a human developed larynx, when our own species isn't even the same.
1) Considering the fairly uniform level of Nenaderthal tools and culture over large areas, we must assime that they had a reasonably effective method of communication.
2) No, we don't assume that aliens must have speech. What they MUST have is a complex and advanced ability to communicate. Far more complex than very inefficient patterns on the ground (I'm willing to acknowledge that grain fields were just what happened to look like their normal communication medium). If the first 'crop circles' had been huge and intricate patterns, I might have thought "hmmm??", but the most complicated message we have seen so far is a dozen words in ASCII, decoding into English.
