Another vote for George R.R. Martin. I'm one book into Song of Ice and Fire and am amazed by the richness of his settings and characters.
And I wouldn't be so presumptuous as to call it epic, but I've long had a soft spot for some of the books in the Dragonlance series. Of the many authors therein, I like Weis and Hickman; Richard A. Knaak (Legend of Huma is definitely worth the trip) and Chris Pierson.
There is, however, one unfortunate running joke that appears in all of the W&H trilogies:
Takhisis, Queen of Darkness tries to take over the world for the nth time. Raistlin Majere always manages to stop her, even if he happens to be dead at the time. It's like watching Pinky and the Brain, with two characters both trying to be the Brain and Caramon Majere running around going "Narf!"
Rather enjoying the Fire of Heaven trilogy by Russell Kirkpatrick. The pace is rather slow and he spends a lot of time describing the terrain etc but it's much better done than most such stuff - especially as he's doing the usual thing of having some people from a small town go out into the bigger world to face an old danger. The mixed reviews for the first volume on amazon.co.ukhere are a fair reflection I'd say.
