Which Christianity would you choose?

I have lots of the former among my ancestors. The latter, not so much, given their complete abstinence from any form of sexual activity.

Didn't the Shakers actually die out because of the abstinence of sexual activity? No new members.
 
Too much emphasis on sexual denial (meaning greater than zero), among the plethora of other problems with all Christianities. Every one is a piece of ****, it's just a matter of degree.
 
If for some reason I was required to join a Christian church I do have preferences and was curious if anyone else did. I reject a loving God that would condemn billions of people to eternal suffering. What then are my theological options?

Buddhism and most pagan variants has a lot of options for you there, but if you want to stay within the fold of Christianity your options are Unitarians and Mormons.

Unitarians are essentially a spiritualist social club that often has a Jesus flavor. They're very nice people. I don't think I've ever met a Unitarian jackass.

While Mormons are the result of a con man making up a bunch of nonsense to marry multiple women and control others, they do have the theological advantage of not believing in Hell, but in "levels of paradise." Of course, it wasn't until 1978 they decided non-whites could maybe, possibly get into the higher levels previously reserved for the "white and delightsome" people, but that's just the racist baggage of a restrictive, corrupting, claustrophobic space cult. They also ban smoking, alcohol and "hot drinks" which includes coffee and tea. Caffeinated cola is a heavily debated topic.

Mormons do believe in a hell called Outer Darkness. Not exactly a place of
insufferable torment yet still distinct from the "levels of paradise".

A little more nuanced than that:
1. It wasn't non-whites, rather specifically blacks of African descent.
2. Even blacks of African descent could get to the highest realm of the Celestial Kingdom but only as slaves to Celestial Kingdom-bound Mormons.

Being an atheist in a Catholic service is not so bad. No one in the building believes in all the rules, not even the priests. And only one or two people on your row actually believe even half the stuff, the rest are just there to keep the peace at home. Non-believers may even be in the majority at most Catholic services.

I'm still a member of a Church of Christ (presumably the same type of church you grew up in), and I'm an annihiliationist. A lot of groups are pretty accommodating of heterodox beliefs like this, so your options are actually pretty broad.
