The idea that one could hire a private agency to inspect restaurants is not completely off the wall--where it breaks down for me is that nothing prevents several such agencies from developing--and the job of personally ensuring that a restaurant is healthy, will be quickly replaced with a job of personally ensuring that one of many particular inspection agencies is reliable.

Just a quick aside here - as someone who has spent about ten years in the restraunt business, health inspections are pretty strict, and it's a really good thing -- the kind of things on the average health inspection are things that any place you want to eat at should be doing, trust me on this
