He definitely did. When studying rhetoric at university (took a semester of evening courses while doing my MSc) our teacher showed us an entire speach by Hitler. As the OP (or the poster the OP quotes) says, he did give a very timid, nervous apperance at the start of the speech. As he progressed in the speech, the passion and fury uo describe rose steadilly until reaching the end point (which was all that I had seen so far in school and documentaries) where he raved like the lunatic he was.
Watching only the end of the rallies, or the beginning would give a very limited view of how manipulative and good at rhetoric Hitler actually was. Coupled with the other things you bring up in your post I see no difficulties in accepting Hitler and his cronies manipulating and egging people on to genocide.
