It's bigger than you think. I once read a book that claimed it was the 1970s beef shortage that greatly contributed to the increase in the popularity of non beef-centric foreign cuisines in the US, as well as the increased popularity of meats other than beef in the American diet in general.
China was obviously responsible for the beef shortage and has been working on this for nearly half a century.

It goes back over 150 years ago to when Chinese immigrants were working on the transcontinental railroad. They had anchor babies whose descendants then started establishing Chinese restaurants in order to make it look innocent when the bioweapon Sweet and Sour Chicken would be unleashed on an unsuspecting populace.
