The problem is that some of your body's sodium necessarily goes along with that water into the urine. Normally, this isn't an issue, but when you are trying to get rid of huge amounts of water you take with it substantial amounts of sodium, thereby depleting your total body sodium. Electrolyte concentrations have to be maintained within a fairly narrow range for proper functioning and this includes sodium. When your sodium concentration drops substantially below that level, you develop serious problems - mostly neurologic - which can lead to death.

The thing is, it's got nothing to do with the "not peeing" part. That's a complete red herring. Water intoxication happens irrespective of whether or not the patient urinates. In fact, it's pretty certain he will urinate, because a lot of urine will be produced and it has to go somewhere.

Conversely, urinary retention isn't good for you whether or not you have drunk excess water. It just takes longer if you don't drink. Actually, it's pretty unlikely that anyone would be able to hold their urine voluntarily for long enough to cause serious harm. It would really require a mechanical obstruction of the urethra.

So, too much water in you causes the issue, which can lead to death.

I thought it was too little sodium / other electrolytes, rather than too much water.

Yin and yang. "Salt poisoning" is really water deprivation, but it's still commonly called salt poisoning. Water intoxication is caused by drinking too much water, it's quite simple. The resulting physiological changes are more complex, but the basic point that if you drink way to much water you can die (even if you pee to your heart's content), is straightforward.
