I've never been a big fan of Father Ted. I prefer The Mighty Boosh and their take on modern mysticism:

We're Mystic magic men
We stay out til five am
And tho' we're bound by Shaman Law
What goes on tour, stays on tour!

Yes taken from one of Lee & Herring's sketches as you've already guessed. Although its also a slight nod to my former beliefs in woo-ish things. While never a deep believer, I suppose like a lot of people I just assumed things like psychic ability/remote viewing etc were real until I scratched the surface a few years ago.... Then I got off the woo bus as it were.
 
When it comes to the gentle deconstruction of religion, another good British comedy show was the little known This morning with Richard not Judy. I cant post links but a youtube search of "sunday heroes" & "pause for thought for the day" throws up some good sketches :)

I loved the series and also fist of fun, found them online last month to my great delight on stewart lees website (http://www.stewartlee.co.uk/)

fist of fun radio series is under audio archive, and the tv series, plus tmwrnj is under video archive.

For people who've not seen it before not sure how well it will have aged since some of it is topical but I love it!
 
If Father Ted was remade, would it have a running joke of "the altar boy was just resting in my bed"?
 
Kicking Bishop Brennan up the Arse was, I think, my favourite.

Black Books is a gem and I also liked Spaced and Big Train.

Four Lions is hard to pigeon hole but it is very funny and ultimately a little poignant.
