All the puns on eggs in this thread bring back memories of Vincent Price as Egghead in the Adam West Batman series. In fact, I think a couple were pretty much lifted from the show.
 
There's a lot of unnecessary dairy and eggs especially in processed food. In some cases plant based alternatives can be easily substituted (there's a whole set of accidentally vegan products out there) in other cases the ingredients are there because lobbyists insist they are.

You don't have to go fully vegan to make a big difference. 7 million people going plant based one day a week is the same as one million becoming vegan.

That said becoming vegan is pretty easy and you don't miss out on much (if anything at all).
I eat a fraction of beef and animal flesh that I use to eat. But honestly, giving up eggs, butter, cream and milk is another thing I don't want to do. I can't think of any dish that isn't better with butter. Margarine is a poor substitute. I love to cook and I'm better at than any of my friends except one who is on a whole other level. He has even been awarded a Michelin star. I worked a few months in the French Bakery he ran. His father was trained at the Cordon Blu in Paris after WW2. French and Italian cooking in my view is the best cuisine on the planet. Dairy and eggs are essential.
Could I do without? Yes. Do I want to? Hell no.

I eat lots of dairy and eggs and my cholesterol levels are not high. The one thing I cut out that I miss is vegetable shortening. I still think Crisco is the best for a great crust on a pie. It's also makes in my view the best fried chicken. But what I read about it convinced me to stop using it.

I was of exactly the same opinion as you a couple of years ago.

You're right that margarine is a poor substitute for butter as a bread lubricant but it's as good if not better in baking IMO and a move away from eating meat and fish has changed my cooking techniques. Vegan butter works just as well if you're cooking a cauliflower steak or frying asparagus.

Same with vegan milks and creams. I didn't consume a great deal except in tea and on cereal but the switch to soya milk and cream was easier then switching to skimmed milk.

The big exception for me is cheese. There are vegan feats and cheddars which are fine as ingredients but I wouldn't want to sit down and eat them. Then again I probably only eat a couple of kilos of cheese a year, mostly around Christmas.

IMO dairy and eggs are not essential for Italian cuisine, indeed much of Southern Italian cuisine does without, using olive oil and not bothering with cheese or eggs.
 
I've noticed that many of the vegan substitutes are ultra processed foods, and that would make me wary of using them if I went vegan.
 
Personally I find that vegan dishes that do their own thing generally taste better than those that try to imitate animals products.
All the vegetables on my plate are recognizable as, and taste like, the vegetables they are. And I know exactly what is in them. I prefer it that way.

Some anonymous maga weirdo on the msn forums was screaming that it was all Bidens fault that (all of a sudden) he has to pay $9.00 (£7.26) for a dozen eggs.

They said they were from Washington State, but I haven't seen that price anywhere. $6.99 (£5.64) is the highest I've seen, and the prices in the city are almost always higher than the rural areas.

Has anyone else seen that $9.00 price?


Of course, I corrected them. I told them that Biden wasn't president anymore, and since the maga weirdoes started blaming him for everything from the minute of his inauguration, it's now the fat clowns turn.

That didn't go over very well at all, and they called me a lefty and a democrat, but of course, I'm not, and I told them so, but like all the other deluded maga weirdoes out there, they didn't believe me.

Anyway, sorry for the long rant.

I'll grab a pic the next time I'm in my local Acme, but yes, the better quality eggs were running just under $9US per dozen at my last visit. My wife, who pays closer attention than I do, specifically bitched about 80 cents per egg.

In fairness, I live in a beach town where the prices are generally higher than a few miles inland.

Are you anywhere near or in Washington State?

We actually have some of the highest prices for food (and everything else too) in the US, but there are some places that are higher.

Next time I'll pay attention to the better-quality egg prices, but you'd think that stupid maga weirdo wouldn't be complaining about those kind of eggs, or would they?

I only recall the price because my wife (liberal to the bone) said it really is getting ridiculous when coming home from her last trip. We have the generic eggs available there, and the Organic or some such hippy thing that we usually get, so not exactly lap of luxury eggs.
 
I've seen it as high as $8.50 a dozen for premium brand eggs. But usually there is a cheaper variety of eggs at the same store that is $5.00. It's still too expensive and crazy. But it isn't any more Biden's fault than the helicopter plane crash. I also oguarantee if they ever come down in price it won't be because of Trump. Neither did the sun rise today because of Trump.
