Filled the freezer and pantry with food. Hoping to have enough to not have to leave the apartment for a couple of weeks if needed. I'm hoping that if there is widespread infection in the US, they can be stretched out over time and not completely swamp our medical resources.

I've got enough freezer food to last for quite some time. That's quite adequate unless... the power goes out for a substantial length of time. I don't get this -- it's always listed as a staple for stocking up in emergencies, but in my opinion I'd rather put my stock in stuff that's more conducive to survival.
Your two sentences contradict each other. You need to stock up on toilet paper if only so that when (not if) there is panic buying you already have enough. You could even make friends by giving some of your stock away.<snip>
Pretty well all of that is nonsense, aside from being able to use it anyway.
But a lot of people think it's true that toilet paper is indispensable - supermarkets in NZ sold out all over the place yesterday when we have one case of Covid-19 in the country.

Wuhan/Hubei are still showing deaths and new infections over two months since the most extreme measures were undertaken.
I'd say this one will be impossible to wait out.
You use a washcloth and wash it afterword. It's really not that complicated.
The goal isn't so much to avoid infection, but to try to spread out the impact so that resources aren't totally exhausted. Even delaying the spread by a few weeks will help hospitals deal with the load.
Also, I know how people empty the grocery store shelves for just a small snowstorm. Buying food now is a good idea if I want anything decent.

They make paper towels that are as soft as toilet paper.
Butt anyway, wiping your ass is totally optional in a crisis situation. I've been in parts of the world where the bathrooms don't even have toilet paper. Just a ceramic hole in the ground. That was not a crisis situation but really you can live fine without wiping all the time.
