If memory serves, Jabba does not believe in the type of "immortality" that he thinks he can prove.
It isn't exactly clear what type of immortality he thinks he can prove. All he is actually doing is trying to prove that something he calls "the scientific model" or "the consensus scientific hypothesis" is wrong.
There are a number of problems with this approach.
How about the complete lack of any evidence to the contrary?Agatha,

How about, "Jabba isn't about 700 years old, therefore he's immortal"?
