I wouldn't be suprised if the Unitarian Universalists had like a "Darwin Day", but then they would have such a fierce argument over why Darwin and not Bohr or some other scientist, and a bunch of poets and authors, it would just become "Notable Humans we Respect, except Not All Of Us respect Them Day".

Edited to add: Most of the second paragraph from the "Clergy Letter Project" is excellent. I have some problems with the first..... I've read the bible myself, recently even. There was no clue to me those first two chapters (that dissagree so much with reality) were written to be taken any way but literally.
