I'm not sure if I have this right, but I thought photons are known to appear and disappear anyhow. How does one know that it is the same photon as Soapy Sam said? How would they know that it didn't appear anywhere in between?

That is a meaningless question. Two particles in the same quantum state are indistinguishable.
