What would a person be if they believed in a god(s) but refused to worship it(them)?

Stupid and/or masochistic and/or suicidal.
 
Belief in God does not logically require worship of God. If one belives in a God that created the universe as an experiment to see how it unfolds, then is there any reason to believe that God wants his subjects to worship him? We don't want the lab rats to worship us; we don't even want them to notice us!

If I believed that God existed as the foundation of all reality and that God's nature was one of sadistic (yet humorous) cruelty, then I would be illogical in feeding the hungry (I mean, unless I'm just putting them off-guard for my inevitable attack). It would be like nailing my furniture to the ceiling (why does that word look wrong no matter how I spell it?)

Nonobservant? Irreligious?

I assume you're not including people who believe that multiple gods exist but worship only a subset of them.

Deism, at least at the single-god level. Not entirely the same though.

There are a number of faiths in which it is actually either discouraged or outright blasphemy to worship the greatest of gods, for various reasons.

Maybe you are looking for 'maltheist.' 1inChrist used it, so I don't know if that really is a word.

 
Believe it or not there is a word for this, it is Henotheism. (Yeah sure, I would know this word). :D

"Henotheism is the belief that many gods exists, yet the worship of only one of these gods. A henotheist would admit that many gods have real existence and are able to be worshipped. However the henotheist chooses to worship only one of these gods. This sets the henotheist apart from the polytheist who worships many gods."
 
There is also a similar concept in Buddhism, and it sometimes shows up in Samurai codes of ethics:

The Duties of the Samurai

Do not criticize moral and social traditions.
Do not lead a life of personal desire.
Think little of yourself.
Think much of others.
Do not desire much in your life.
Do not regret much in regard to yourself.
Do not envy others their success.
Do not regret parting.
Do not harbor resentment against others.
Do not love too deeply.
Do not hate.
Do not build houses that are too beautiful or too big.
Do not eat too much, or too rich foods.
Do not posses many changes of clothing; Do not wear fine garments or jewels.
Do not be superstitious.
Do not spend money on anything other than your sword.
Do not fear death in the service of your master or in order to help another.
Do not posses too much money.
Respect the Buddha and the gods but do not pray to them or depend on them.
Uphold honor without fearing death.
Never forget the way of the Samurai.
